Getting my my son to school in the mornings is not a pretty sight. There are no "morning people" residing in our house. Hubby and I try to refrain from speaking until we've had our coffee, and the three year old... well let's just say he's best left alone until at least 9 a.m.
I usually try to make my son's school lunch and pack his backpack the night before so we can just get up and walk out the door. But, many times life gets in the way and I forget. Which means I'm in a frantic rush the next morning trying to get everything done and Jake to school on time.
So, today I had this inspiration to pack lunches ahead of time and freeze them. That way I can just pull it out and throw it in his lunchbox. He won't even need a cold pack now to keep his milk cold!
My son eats the exact same thing every day at school. If it isn't the same, he doesn't eat it. So, his lunches consist of ham, cheese, peanut butter crackers, banana or zucchini bread (gluten free), veggie chips, a banana and almond milk.
I started by cutting up the cheese and ham and throwing individual portions into baggies. You could just as easily make ham and cheese sandwiches and freeze them. Just don't add condiments before freezing.
Next, I made a bunch of peanut butter cracker sandwiches on gluten free crackers. I bagged two cracker sandwiches up with half a slice of zucchini bread.
Now, all I have to do for lunches is grab a bag of ham/cheese and a bag of bread/crackers out of the freezer, throw it in the lunch box with his fresh fruit, chips and milk and I'm good to go!
I froze ten lunches. My little boy only goes to school twice a week, so that will last us a full month! I'm looking forward to the extra 15 minutes of sleep I'll get in the mornings now.
