Gluten Free Christmas Sugar Cookies


(Just a glimpse into the cookie making chaos of yesterday)
 Gluten Free Sugar Cookies

1 cup sugar
1 cup shortening
2 egg yolks
1 tablespoon gluten-free vanilla
2 1/4 cups Gluten-Free Flour Blend (I used Bob's Red Mill Baking Flour)
1/4 teaspoon salt
Combine sugar and shortening in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg yolks and vanilla. Continue beating, scraping bowl often, until well mixed. Reduce speed to low; add flour blend and salt. Beat until well mixed. Refridgerate dough for at least two hours (overnight is preferred).

Preheat oven to 350°F. Sprinkle surface with gluten free flour and roll dough out to 1/4 inch thickness. Cut cookies out with cookie cutters and bake for 8-10 minutes on ungreased cookie sheets. Once cookies are golden brown, remove from oven and let cool completely before frosting.
